Oven Roasted Potatoes p. 341

This is a simple recipe that I doubt is new to anyone.  My mom used to put the potato pieces in a big ziplock bag with olive oil and her favorite seasonings and shake to make sure each piece gets evenly coated. Okay, so I admit it, I did that here too. Its so simple and fun. Admit it, its fun to shake a plastic bag of food around.

Obviously, chop your potatoes into chunks. Put them on a baking pan and drizzle with olive oil (or use the bag method). Roast for 45 minutes to an hour, stirring every so often.
