Classic Potato Salad, p. 189

I had some extra potatoes on hand and decided to make potato salad. Its one of my favorite things in the summer since it is serve cold.

First, cook your potatoes and chop into chunks (this can be done before or after cooking, depending on your cooking method). Once cooled, mix with some mayo, vinegar, and your other favorite potato salad mixins.

I added hard boiled eggs, pickles, and a little Dijon mustard. Delicious, simple, classic salad.
